Signature drink: the double down (Woodford Reserve bourbon, fresh peach puree, ginger-infused simple syrup, fresh lime juice, ginger ale)
You better be a good bartender if you're going to charge $20 a cocktail in a secluded lounge where high-rollers are shelling out $1,000 minimums on some tables. Ray Srp, a veteran of several Vegas casino bars (Excalibur, Treasure Island), has been mixing cocktails for 29 years and makes drinks for some of the most demanding consumers on the planet: high-limit blackjack players. His menu divides drinks into two categories: Bellagio classics and original creations for Club Privé. Srp named one of his drinks after his primary customer base. A very high-end version of the cocktail known as the French connection, it's called "the whale" and is made with Hardy's Rosebud Family Reserve Cognac and 150th anniversary Grand Marnier. The price? A mere $375.
