Kyana Shares a Favorite Portuguese Holiday Dish

Playboy Club model Kyana kindly shared several of her family’s favorite recipes with us for Playboy’s holiday recipe series this year. If you missed her Argentinian Empanadas recipe, you can find that here. Read on for another one!

“I have looked forward to eating this traditional Portuguese dish every Christmas since I was a little girl,” Kyana told Playboy. “The aroma would fill the house along with the other foods prepared and every time I make it, it takes me back to my childhood and the holidays spent with my family.”

Bacalhau is the Portuguese word for cod and is considered a staple of the cuisine. Here’s Kyana’s family recipe for the delicious dish.

To Create the Bacalhau:

Ingredients:

  • 3-4 eggs hard boiled, peeled and quartered (you can leave eggs out if not a fan)
  • 1 1⁄2 lbs salt cod fish, changing the water at least 3 times a day that is 1 pound after soak and drying (soaked for two nights)\
  • 4 -6  medium potatoes, peeled and quartered
  • 4 -6  garlic cloves, sliced
  • 1⁄4 cup olive oil, high quality
  • 1 TBL sweet paprika
  • 1/4 TBL salt
  • 1/2 TSP pepper
  • 1 TBL dried parsley
  • 1 large onion, peeled, halved and sliced
  • 20 Portuguese black olives or Spanish olives

Directions:

 1. Soak cod in cold water in the fridge for 1 or 2 days, changing water at least 3 times a day (soak longer for a less salty taste, the fish was preserved in salt beforehand so it’s quite salty and that’s why you soak for so long). Set aside in fridge. 

2. Preheat oven to 375 

2. Peel, chop and boil potatoes in a pot with water and sea salt. 

3. Once boiled, add to deep baking dish with fish. 

4. Prepare hard boiled eggs by boiling and then setting aside to cool before peeling and cutting into quarters or smaller portions. 

5. Add eggs to baking dish with fish and potatoes. 

6. Sauté onions and garlic with olive oil till lightly caramelized before adding to baking dish with all seasonings, olives, and parsley. 

7. Combine throughly using hands or slotted spoon. 

8. Bake in oven for approximately 30 mins

9. Raise oven temperature to 425 and bake for 10 more mins to get top of dish lightly crispy.
