Not sure about you, but I’m a sucker for anything cheesecake. To lessen the indulgence guilt for all of us, Maddie crafts a creamy batch of cake pops of the perfect size.
Sweet as she is, Ms. Peveril expressed nothing but gratitude when asked to be a part of Playboy’s Holiday Recipe Series. “Thank you so much for letting me show one of my favorite holiday treats to everyone!” Maddie gleefully exclaimed.
To create the cheesecake pops:
Ingredients:
- 1 cup of cream cheese
- Candy melts or chocolate for coating
- Lollipop sticks
- Red and green sprinkles
- 2⅖ cups all-purpose flour
- 4 TSP baking powder
- 1⅔ granulated sugar
- 2 TBL vanilla extract
- 1 TSP salt
- 1½ cups milk – room temp
- ¾ unsalted butter – room temp
- 2 eggs – room temp
Directions:
- Preheat your oven to 325 F
- Prep your pans to your liking. You can use cooking spray, parchment paper, or grease your pan with butter then dust it with flour. I personally just put a few drops of light olive oil in my pans and spread it around with a basting brush.
- Mix dry ingredients first (flour, baking powder, sugar, salt).
- Slice your softened, room-temp butter into pieces. Mix everything until crumbly.
- Gradually add in your wet ingredients (eggs, milk, vanilla extract) while mixing the batter. It’s important to mix the batter until just combined, being careful not to over mix.
- Divide the batter evenly between the prepared pans.6.
- Bake at 325°F for 37-45 minutes, or until a toothpick inserted into the middle comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire cooling rack for additional cooling.
- Crumble & mix. Crumble the cooled cake and mix with cream cheese until moist and moldable.
- Shape & chill. Form small balls, place on a baking sheet, put the sticks in, and chill for 1-2 hours until firm.
- Melt chocolate. Melt candy melts or chocolate on stove or microwave as directed on package.
- Dip & Decorate. Insert lollipop sticks, dip cake balls in melted chocolate, and decorate.
- Chill & Enjoy. Allow cake pops to chill for half an hour or so, then indulge in these delightful treats!
